Traditional Chinese Sichuan Dan Dan Noodles





Ingredients
For Dan Dan Noodles
- 1 cup Minced Pork (mixed with below)
- 1 cloves Garlic (minced), ½ Onion (chopped)
- 1 tsp Soy Sauce, 1 tsp Dark Soy Sauce
- 1 Tbs Chinese Cooking Wine

- 1 handful fresh Chinese Noodles
- 1 sprig Mustard Greens (cut and blanched)

For Seasoning Sauce
- 1 tsp Soy Sauce, 1 tsp Dark Soy Sauce
- 1 tsp Dark Vinegar
- 1 tsp Sesame Paste (or Tahini)
- 1 tsp Sugar, 1 pinch of Salt
- 3 Tbs Chilly Oil (from below)
- 1 tsp Chinese Sichuan Peppercorns (crushed)

For Chilly Oil
- 3 Tbs Vegetable Oil
- 1 tsp Chilly Flakes, ½ tsp Minced Garlic

For Garnishing
- Coriander Leaves & Spring Onions

Preparation
- Start by roasting the Sichuan Peppercorns, then pound to a powder, set aside.
- Marinade Minced Pork with Garlic, Onion, Soy, Dark Soy, and fry in some Vegetable Oil. Add a splash of Chinese Cooking Wine.
- Prepare the Chilly Oil, heat up 3 Tbs Vegetable Oil, add ½ tsp Minced Garlic and 1 tsp Chilly Flakes and fry on low heat. Set aside
- Prepare the Seasoning Sauce in a plate. Add 3 Tbs Chilly Oil from above. Add 1 tsp Soy, Dark Soy, Dark Vinegar, Sesame Paste, Sugar, Salt and crushed Chinese Sichuan Peppercorns.
- Blanch the Mustard Greens, drain, set aside.
- Cook the Fresh Chinese Noodles, drain.
- To assemble the Noodles. Prepare the plate  with the Seasoning Sauce as above. Layer the Noodles on top. Top with the cooked Minced Pork and Mustard Greens.
- Sprinkle with Coriander Leaves, Spring Onions and more Chinese Sichuan Peppercorns.
- Mix well and enjoy!
