Chinese Style Steamed Fish





Ingredients
For Steamed Fish
- 1 medium Sea Bass (clean, gutted, scored)
- 2 cm Ginger (thinly shredded)
- 3 cloves Garlic (thinly shredded)
- 2 Dried Shitake Mushroom (soaked, shredded)
- 1 Tomato (sliced)
- 1 Tbs Oyster Sauce
- 1 Tbs Soy Sauce
- 1 Tbs Chinese Cooking Wine
- Salt

For Garnishing
- 2 sprigs Coriander Leaves (chopped)
- 2 sprigs Spring Onions (chopped)
- 1 Red Chilly (shredded)
- Vegetable Oil (heated)

Preparation
- Clean the fish, place on steaming plate / bowl.
- Sprinkle Fish with some salt and Oyster Sauce.
- Layer with Ginger, Garlic, Mushroom and Tomatoes.
- Sprinkle Chinese Cooking wine and Soy Sauce over the dish.
- Steam in high flame for 10-12 minutes or until cooked.
- For Garnishing, first heat Vegetable Oil to a very high temperature. Place Coriander Leaves, Spring Onions and Chilly on top of Fish, and slowly and carefully pour hot Vegetable Oil over.
- Sprinkle some salt over the herbs and serve immediately.
- Serve with Rice. Enjoy!
