One of my favorite dim sum is Lor Mai Gai (Glutinous rice with chicken). Usually made and served in small portions. Today I attempt to recreate a larger simpler version of lor mai kai using my mini rice cooker. And it turned out great. Try this recipe!

Ingredients
500 gm Chicken pieces (marinated with 1 Tbs dark soy sauce + 1 Tbs light soy sauce)
2 cups Glutinous rice (soaked for 4 hours, then drained, and marinated with 1 Tbs dark soy sauce + 1 Tbs light soy sauce, and 2 Tbs oil)
2 chicken sausages (sliced)
6 pieces Chinese dried mushrooms (soaked and drained)
2 cups Chicken stock
2 cups Glutinous rice (soaked for 4 hours, then drained, and marinated with 1 Tbs dark soy sauce + 1 Tbs light soy sauce, and 2 Tbs oil)
2 chicken sausages (sliced)
6 pieces Chinese dried mushrooms (soaked and drained)
2 cups Chicken stock
Method
1. Marinate the chicken for 1 hour
2. Marinate the glutinous rice for 1 hour
3. Prepare your rice cooker, add 2 Tbs oil to the rice pot.
4. Layer the mushroom, chicken, sausages, rice, level
5. Add chicken stock, and cook using a rice cooker rice cycle
