Chinese Black Soy Sauce Chicken

This is one of my favorite chicken recipes with thick dark soy sauce and eaten with rice. Brings back a lot of memories during childhood when during festive season we get to have chicken cooked in a simple manner like this.




Ingredients
For Black Soy Sauce Chicken
- 1/4 Chicken (Cut into small pieces)
- 1 cup Tofu Skins
- 2 cloves Garlic
- 1 Star Anise
- 1 cup Black Woodsear Mushroom (hydrated)
- 1 hard boiled Egg
- 1 tsp Chilly Flakes
- 1 Tbs Sugar
- 1 tsp Salt
- 1 pinch Black Pepper
- 2 Tbs Black Soy Sauce
- 1 Tbs Light Soy Sauce
- 1 Tbs Oyster Sauce
- 2 Tbs Chinese Cooking Wine
- Vegetable Oil
- 1 Tbs Cornflour with Water

Preparation
- Heat pot and fry Garlic and Star Anise.
- Add the Chicken, fry for few minutes.
- Add all the dry spices, fry for 1-2 minutes
- Add 1/2 cup water.
- Bring to a boil.
- Then add all the Sauces, bring to boil.
- Add the Tofu Skins.
- Bring to a boil, cook for 20 minutes.
- Add the hard boiled egg.
- Add Chinese Cooking Wine.
- Thicken with Cornflour Slurry.
- Bring to a boil. Then turn off flame.
- Serve hot with rice.
