Sichuan Vinegar Potatoes

Sichuan province in China is famed for its very spicy and numbing food. At the same time, they have also very light and fragrant dishes. One of my favorite dishes of Sichuan is their lightly spiced and vinegary potato dish. The vinegar gives an accent to the floury taste of potatoes and makes it feels a little crunchy. One dish which is a must try in Sichuan Chinese restaurants.




Ingredients
For Sichuan Vinegar Potatoes
1-2 Potatoes
2 cloves Garlic (chopped)
1 sprig Spring Onion (chopped)
1 Tbs Mushroom/Vege Powder
½ tsp Chilly Flakes
½ tsp Sichuan Peppercorns (crushed)
2 Tbs White Vinegar
Coriander Leaves
Salt, Vegetable Oil

Preparation
Peel the potatoes, shred and wash/soak in cold water.
Heat up oil in pan, fry the Garlic and Spring Onion.
Then add the Potatoes, fry, then add in the Mushroom powder, Chilly Flakes and Sichuan Peppercorns. Cooked until semi soft.
Add 2 Tbs Vinegar, and season with Salt where necessary.
Add in Coriander leaves.
Serve hot or cold.
