Mushrooms are a very healthy and nutritious vegetarian substitute for meat. And the spongy texture helps it to absorb all the flavors it is cooked in. One very delicious and fragrant mushroom dish is an Indian spiced masala mushroom. The fragrant masala spice flavors are slowly absorbed into the dish and it is delicious to eat with rice or flat breads. Great dish to share with friends or family.
Ingredients
For Masala Mushrooms
250gm Oyster Mushrooms
2 cloves Garlic (chopped)
1 Onion (chopped)
½ tsp Mustard Seeds
½ tsp Fennel Seeds
½ tsp Cumin Seeds
1 tsp Turmeric Powder
2 tsp Coriander Powder
1 tsp Chilly Flakes
1 stalk Coriander Leaves
1 stalk Spring Onion
Vegetable Oil
Salt & Pinch of Pepper to taste
Preparation
Break up larger pieces of Mushrooms.
Heat Vegetable Oil and fry the Mustard Seeds, Fennel Seeds and Cumin seeds until spluttering.
Add the Garlic and Onions, fry until soft
Add the spice powders, fry.
Then add the Mushrooms. Dry fry where possible.
Season with Salt and Pepper.
Then add the Coriander Leaves and Spring Onions.
Serve hot.
