Huevos Rancheros
Ingredients
For Huevos Rancheros
- 1 cup Tomato Pasta Sauce
- 2 Eggs
- 1 Onion (finely chopped)
- 1 cup Cabbage (shredded)
- 1 pinch Dried Herbs
- 1 pinch Black Pepper powder
- Salt
- Yoghurt or Sour Cream
Preparation
- Make the Tomato sauce. Heat pan, heat up the Tomato Pasta sauce. (You can either make your own or use a ready made sauce)
- Add in the Onions, Cabbage and the dried Herbs.
- Season the sauce.
- Make 2 wells in the sauce and crack Eggs into the wells. Cook until Eggs are set with the yolk still a little runny.
- Sprinkle some salt on the Eggs.
- Make the Flour Tortillas. Add a pinch of Salt to Flour and add sufficient Water to make a soft dough. Divide into small balls, if needed, use a roller and pan roast the Tortillas.
- Assemble the Tortillas with the Eggs and Sauce and spoon over some Yoghurt.
- Enjoy.
