Vietnamese Banh Xeo, Crispy Rice Pancake
Ingredients
For Vietnamese Banh Xeo (1 portion)
- 1/2 cup Rice Flour
- 1 pinch Turmeric Powder
- 1 pinch Salt and Pepper
- 1 stalk Green Onion (chopped)
- Water
For Filling
- Thin slices of Meat (Chicken, Bacon, Pork)
- ½ Onion (sliced)
- 1 cup Bean Sprouts
- Salt to taste
- Vegetable Oil
For Herbs
- Mint, Coriander, Spring Onions
Preparation
- First prepare the Banh Xeo batter. Add Rice Flour, Turmeric, Salt, Pepper, water and Green Onions to form a thin batter.
- Add Oil to frying pan. Fry the thin slices of meat, add the sliced Onions.
- When meat is cooked, pour in enough of Batter to form a thin pancake.
- Cover and let cook for 3-4 minutes.
- Add a handful of Bean Sprouts and Spring Onions on one side of the pancake, cover and cook for 2-3 minutes. Sprinkle over some salt.
- Serve hot with fresh herbs with some Vietnamese chilly sauce.
