Sichuan Hot Oil Wantons

Ingredients
For Hot Oil Wantons
- Wanton Skins
- 1 cup Minced Meat (Pork or Chicken)
- 1.5 cups Cabbage (finely chopped)
- ½ cup Carrots (finely chopped)
- 1 Tbs Cornstarch
- 3-4 stalks Spring Green Onions (chopped)

For Chilly Oil
- 4-5 Tbs Vegetable Oil
- 1 Clove Garlic (finely chopped)
- ½ Onion (finely chopped)
- 2 Tbs Red Chilly Flakes/Powder

For Garnishing
- 1 Tbs Soy Sauce
- Spring Onions (chopped)
- Cucumber
- 2 Tbs Sichuan Peppercorns (ground)

- Salt to Taste


Preparation
- First roast the Sichuan Peppercorns and ground into fine powder, set aside
- Then make the Chilly Oil. Heat 4-5 Tbs Vegetable Oil. Fry the Garlic and Onions until translucent. Add 2 Tbs Chilly Flakes. Set aside.
- Make the filling for the Wantons. Mash up meat. Then add Cabbage, Carrots, Spring Onions and Cornstarch. Season. Set aside
- Make the Wantons by stuffing the filling into the parcels.
- Boil the Wantons for 2-3 minutes until cooked.
- Dress the plate. Add 1 Tbs Soy Sauce, 2-3 Tbs Hot Chilly Oil, 1 tsp Ground Sichuan Peppercorns, 1 Tbs Spring Onions.
- Place the hot cooked Wantons into the plate. Sprinkle with more Sichuan Peppercorns and Spring Onions.
- Serve Hot with Sliced Cucumber.
- Enjoy!
