Sabudana Khichdi (Indian Fried Sago Pearls)





Ingredients
For Sabudana Khichdi
- 1.5 cups Sago/Tapioca Pearls (hydrated)
- ½ cup Peanuts (dry roasted, pounded)
- 1 cup Mixed Vegetables
- 1 Onion (chopped)
- 2 cloves Garlic (chopped)
- ½ cm Ginger (chopped)
- 1 pinch Asafetida (Hinq)
- ½ tsp Mustard Seeds
- ½ tsp Fennel Seeds
- ½ tsb Cumin Seeds
- 1 pinch Turmeric Powder
- 1 pinch Chilly Flakes
- 1 pinch Black Pepper Powder
- 1 tsp Mango Powder (or Lime Juice)
- Salt, Vegetable Oil
- 1 sprig Coriander Leaves

Preparation
- At least 2-3 hours before, hydrate the Sago Pearls and leave it until expanded.
- Dry roast the peanuts and grind it to a rough grind, set aside.
- Heat up 2-3 Tbs Oil in non-stick wok, fry the Mustard Seeds, Cumin Seeds and Fennel seeds until they crackle.
- Sprinkle some Asafetida (Hinq), then add Onions, Garlic and Ginger. Fry until translucent.
- Add in all the spice powder except Mango Powder. Fry, then add in the mixed Vegetables. Fry.
- Add in the hydrated Sago Pearls, fry until translucent. (May add some water if need). Season with Salt.
- Stir in the Mango Powder at the end.
- Sprinkle over Peanuts and Coriander Leaves.
- Serve hot and enjoy!
