Vegetarian Fried Bihun (Rice Vermicelli)





Ingredients
For Vegetarian Fried Bihun (Rice Vermicelli)
- 1.5 cups Rice Vermicelli (soaked)
- 4cm Carrots (shredded)
- 1 cup Cabbage (shredded)
- 1 red Chilly (shredded)
- 1 Tomato (cut into small pieces)
- 2-3 stalks Mustard Green (cut)
- 1 Tbs Soy Sauce
- 1 Tbs Dark Soy Sauce
- 2-3 Tbs Vegetable Oil
- Salt

Garnishing
- Fried Shallots
- Fried Peanuts

Preparation
- Prepare the Garnishing by frying Peanuts/Shallots if needed.
- Heat up frying pan. Add 2-3 Tbs Vegetable Oil.
- Fry the Carrots for a minute, then add the Cabbage and Chilly and fry for a minute. Add a little salt.
- Then add the Rice Vermicelli with a cup of Water, turn heat to high.
- Then Add Mustard Greens and Tomato.
- Add Soy Sauce and Dark Soy Sauce.
Fry until Vermicelli has absorbed all the liquid.
Serve on plate, sprinkle on Fried Shallots and Peanuts.
