Vegetable Couscous





Ingredients
For Vegetable Couscous
- 1 cup Couscous
- 2 cups Vegetable Stock or Water
- ½ tsp Dried Herb Mix
- 1 Cucumber (deseeded, chopped)
- 1 Tomato (chopped)
- 1 clove Garlic (minced)
- 1 small Onion (minced)
- 1-2 Tbs Black Olives (chopped)
- Salt and Pepper to taste

Preparation
- Bring the Vegetable Stock or Water to the boil.
- Add the dried Herbs, some Salt and Pepper.
- Then pour in the Couscous and bring to boil. When water is almost absorb, cover and turn off the flame.
- Let it sit covered for 5 minutes.
- Sprinkle some salt on the chopped Vegetables.
- Add the Vegetables, Onion and Garlic as much as needed to the Couscous, mix well, season and add a few Tbs of Olive oil.
- Serve and Enjoy!
