Sichuan Mapo Tofu
Ingredients
For Mapo Tofu
- 2 cup White Tofu (cubed)
- 1-2 tsp Sichuan Peppercorns (roasted, ground)
- 1 tsp Red Chilly Flakes
- ½ cup Minced Pork
- ½ cm Ginger (minced)
- 2 clove Garlic (minced)
- 1 medium Onion (chopped)
- 3 sprigs Green Spring Onions (chopped)
- ½ cup of Coriander Leaves (chopped)
- 1 Tbs salted Chinese Black Beans (optional)
- 1 Tbs Soy Sauce
- 1 Tsp Dark Soy Sauce
- Salt
- Vegetable Oil
- Cornstarch with Water (for thickening)
Preparation
- Start by roasting the Sichuan Peppercorns, and pound into a fine powder, set aside.
- Heat 2 Tbs Vegetable Oil in pan and fry the Ginger, Garlic and Onions for 1-2 minutes.
- Add the Minced Pork and fry for 4-5 minutes.
- Add Chinese Black Beans (optional), and then add half the - Spring Onions, Red Chilly Flakes and half of Sichuan Peppercorns and fry for 1 minute.
- Add 1 cup Water and bring to boil.
- Add Tofu, then add Soy Sauce and Dark Soy Sauce and cook for 5 minutes.
- Thicken with Cornstarch mixture, bring to boil.
- Sprinkle with Coriander Leaves and Green Spring Onions.
- Plate up and sprinkle on top with the balance Sichuan Peppercorns.
- Serve with Rice. Enjoy!
