Masala Chicken Curry (Simple Recipe)

Masala Chicken Curry





Ingredients
For Masala Chicken
- 1 Chicken (cut into bite size pieces)
- 2 Potatoes (cubed)
- 3 medium Onions (chopped)
- 3 cloves Garlic (chopped)
- Vegetable Oil

For spices
- 1 Tbs Mustard Seeds
- 1 tsp Fennel Seeds
- 1 tsp Cumin Seeds
- 1 sprig Curry Leaves
- 1 Tbs Turmeric Powder
- 2 Tbs Coriander Powder
- 1 Tbs Chilly Powder
- 5 Tbs Curry Powder (any brand)

For thickening
- 2-3 Tbs Chickpea Flour (mixed with ½ cup water)

Preparation
- Heat up 4-5 Tbs Vegetable Oil in large pot or pan
- Fry the Mustard Seeds, Fennel Seeds and Cumin Seed until crackling.
- Add Curry Leaves, fry.
- Then add the Onions and Garlic and fry until soft.
- Add all the balance spices, the Turmeric, Coriander, Chilly and Curry Powder. Fry for 1 min until fragrant.
- Then add in the Chicken pieces, coat well, then add 1-2 cup of water and bring to simmer.
- Add Potatoes and cook for 15-20 minutes until Chicken is tender.
- Thicken with a mixture of Chickpea Flour and Water, and bring to a final boil.
- Let it rest for 15 minutes.
- Serve and Enjoy!
