Malaysian Devil's Chicken




Ingredients
For Devil’s Chicken
- To be ground into spice mixture
- 1 large Onion
- 1cm Ginger
- 1.5cm Galangal
- 1.5cm Turmeric
- 1 stalk Lemongrass
- 4-5 cloves Garlic
- 4-5 Candlenuts
- 10-12 dried Red Chilies (soaked)

Other ingredients
- 1 small Chicken (cut into pieces)
- 1 Potato (cubed)
- Vegetable oil

For Seasoning/Garnishing
- Salt and Pepper
- A pinch of Sugar
- 1 Tbs Mustard Seeds, Roasted and Ground

Preparation
- Grind all items in spice mixture together into a smooth paste
- Heat up 4-5 Tbs Vegetable Oil in pan, and fry spice paste until fragrant
- Add Chicken and fry for 3-4 minutes, add a splash of water occasionally.
- Add Potatoes, season with Salt and Pepper and continue cooking until Chicken is cooked and Potato soft.
- Add ground Mustard Seeds and cook for 1 minute.
- Let it rest of 15 minutes before serving.
