Larb Moo (Thai Spicy Marinated Pork)





Ingredients
For Larb Moo
- 1 cup Minced Pork
- 4 Tbs Sticky Rice (Roasted and Pounded)
- 1 cup Mint Leaves
- 1 medium Onion (finely chopped)
- 2 sprigs Green Onion (finely chopped)
- 2 Limes

For Seasoning
- 1 Tbs Fish Sauce
- 1 tsp Red Chilly Flakes
- 1 tsp Sugar
- Lime

For Steamed Sticky Rice
- 1.5 cups Sticky Rice (soaked and steamed)

Preparation
- Start by steaming the soaked Sticky Rice until soft (at least 30 mins)
- Roast the separate 4 Tbs Sticky Rice until brown and pound into fine powder, set aside.
- Cook the Minced Pork in a pan with a splash of water until cooked.
- Add to the cooked Pork the Seasoning of Fish Sauce, Chilly Flakes, Sugar and Lime Juice.
- Add the chopped Green Onions, Onions and Mint Leaves.
- Test for seasoning and adjust. Then sprinkle the pounded roasted Sticky Rice on top.
- Serve with Sticky Rice and more Mint Leaves.
- Serve and Enjoy!
