Kerala Unniyappam

Kerala Unniyappam (Deep Fried Rice-Banana-Coconut Balls)





Ingredients
For Kerala Unniyappam (makes about 40-50 pieces)
- 8-10 ripe Bananas
- 1 cup Shredded Coconut
- 1 cup Coconut Milk
- 1 cup Jaggery or Palm Sugar
- 3-4 Tbs Cardamon Powder
- ½ kg Rice Flour
- 1 Tbs Baking Powder
- Water

Preparation
- Peel the Bananas, place all ingredients (except Rice Flour) into a - Blender/Grinder and blend into a watery mixture.
- Pour into a large container and add Rice Flour with sufficient water to - form a thick batter.
- Heat a Unniyappam Pan, and a separate pot of Oil.
- Fry and shape the Unniyappams before transferring them to the frying pot for thorough frying.
- Fry until brown, drain and let cool before eating.
