Crepe Suzette





Ingredients
For Crepes
- 1 cup Plain Flour
- 1 cup Milk
- ½ tsp Vanilla Extract
- 1 Tbs Zest from Grapefruit
- 1 Egg

For Sauce
- 1 Tbs Butter
- ½ cup Orange Juice
- A splash for Orange Liquor (optional)

For Garnishing
- Segments of Grapefruit / Orange

Preparation
- Start by making the batter. Mix in the Flour, Milk, Vanilla Extract, Grapefruit zest and Egg. Mix well to a thin consistent batter.
- Heat up non-stick pan, make thin crepes.
- Fold each crepe into quarters and set aside.
- Heat up 1 Tbs Butter in non-stick pan, add Orange Juice and bring to boil.
- Add back the Crepes to the sauce and flambee with Orange Liquor (optional).
- Serve with Grapefruit segments.
- Enjoy!
