Chinese Abacus Seeds (Suan Pan Zi)





Ingredients
For Abacus Seeds
- 1 small Yam Bean (peeled, chopped)
- Tapioca Flour / Starch
- Salt

Condiments for frying
- 1 small Onion (chopped)
- 3 pieces Garlic (chopped)
- ½ cm Ginger (chopped)
- 2 cm Carrot (chopped)
- 3 Tbs Dried Shrimp (soaked, chopped)
- ½ cup Mushroom (chopped)
- 3 Tbs Vegetable Oil

For Garnishing
- 3-4 Green Spring Onions (chopped)
- 2 Tbs Fried Shallots

Preparation
- First prepare the Abacus seeds. Peel and chop Yam Bean. Put into steamer and steam till soft.
- Add sufficient Tapioca Start into Yam Bean to make a soft dough. And start forming Abacus Seeds by hand.
- Boil Abacus seeds in water until it floats and drain thoroughly and then coat with Vegetable oil.
- Heat 3 Tbs Vegetable Oil in wok and fry Dried Shrimp  until fragrant. Then add Onion, Garlic, Ginger, Carrot and fry for 3-4 minutes. Then add Mushroom. Fry for extra 3-4 minutes.
- Add Abacus seeds and season with salt and pepper to taste, fry for a few minutes.
- Remove from heat, add in Green Spring Onions and Fried Shallots and serve.
