Deep Fried Sweet Potato Balls - Delicious and Addictive

One of the easiest and favorite sweet snacks I have made is this. Deep fried sweet potato balls, which only needs 3 ingredients. And very easy to make. You can use any type of sweet potato, today I am using Japanese sweet potato which has a very sweet taste. And for this recipe to work, one must use tapioca starch / flour to give it that chewy texture.

Ingredients (Adjust amount as needed)
100gm Japanese Sweet potato
50gm Tapioca Flour (Tepung Ubi Kayu) - don't use other flour
25gm Sugar

Preparation
1. Steam or boil the sweet potato until soft, skin, and mash
2. Add sufficient tapioca flour and sugar to form a soft dough
3. Divide into small balls and deep fry
4. Drain on kitchen towel
5. Let it cool and enjoy!
